1 Moon Glow Tomato
1 Green Zebra Tomato
1 Ponderosa Red Tomato
Dash of Extra Virgin Olive Oil
¼ Cup Diced Onion
Salt & Freshly Ground Pepper to Taste


The 3 tomatoes should be of equal size, cut into 1/2 inch cubes. Combine all ingredients and let sit for 1/2 hour at room temperature. This will make about 1 to 2 servings depending on the size of the tomatoes.
For a little more zest you can add 2 tablespoons chopped fresh cilantro.
We use these three types of tomatoes because this is what we grow in our garden. You can try other types as well, but try to mix hi and low acid tomatoes to get the most flavor from the salad.
